I scream for beets! You scream for beets! We scream for beets! Said NO ONE ever. People either love or hate beets, not much space falls between. Strictly for the lovers, this delicious beet muffin recipe is sure to garner a few yum, yum, yums. Beet lovers, please add them to your diet a few times a week for enhanced digestion.
Supplements are more expensive but available for the haters.
While beets are an excellent addition to a salad, tasty when roasted and saute deliciously, juicing is the quickest way to consume. Previously, I only juiced beets or any other vegetables as a knee jerk reaction to my immune system already being trashed.
This year I’m taking preventative measures with my health, and juicing often. I use the entire vegetable, therefore I prefer buying organic produce. Juicing is beneficial to your health but throwing away the pulp feels like wallet abuse. This beet juice pulp muffin recipe incorporates the leftover fiber from juicing into my stomach and doesn’t waste my coins.
Beet muffin recipe
Apples, beets, carrots, and ginger are in the pulp. The beet muffins are delicious, moist and easily stored.
Beet pulp muffins make a yummy and quick breakfast or snack.
The muffin’s flavor profile is sweet and earthy. Unbleached flour and Greek yogurt are part of this tasty recipe. However, substitute a non-dairy yogurt and or flour alternative for a gluten-free and vegan option. Store the muffins in the refrigerator. Freeze the beet muffins for longer storage time.
Why beets?
I didn’t just wake up and say oh yeah, gonna get those beets today.
It was the result of a nutritionist visit for bloating and wellness. He discovered my gallbladder was not performing well after extensive blood panel testing. The gallbladder function never crossed my mind, nor did I know what it did. Maybe, I’m a blundering anatomy idiot or I missed out on the all-important gallbladder lesson in science. If you too have no idea what a gallbladder does or how beets can assist, continue reading for a rapid yet non-scientific response.
What does the gallbladder do?
The gallbladder is a small organ located near the liver that aids in the digestion of fat, fat-soluble vitamins, and bile movement. It’s pear-shaped and acts like a cup for unused bile when needed for digestion, the gallbladder pours the necessary bile into the small intestine and helps you break down fatty food. Improper gallbladder function can lead to uncomfortable or annoying bloating and cramping. If bile builds up it can lead to greater issues like hard deposits of bile also known as gallstones. To help things move along my nutritionist prescribed a diet inclusive of beets three times per week.
Beet juicing health benefits
Beet nutrients, fortunately, are stable and do well when juiced. Be forewarned, beet juice is concentrated, therefore it can act as a laxative. To avoid a lot of bathroom time I juice the beets once a week and eat them in a salad or with eggs for breakfast. Beet juice can improve blood flow, lower blood pressure and assist with liver detoxification.

Beet Juice Pulp Muffins Recipe Ingredients
Makes 20 – 24 muffins
Total cooking time: 20 minutes
Preparation: 10 – 15 minutes
Total time: 35 minutes
6- 8 cups of beet juice pulp (my recipe included two beets, two medium carrots, 1 red delicious apple, 1” piece of ginger)
1 ½ cup flour
½ cup light brown sugar
1 tsp baking soda
½ cup white sugar
1 tsp baking powder
½ tsp fine sea salt
¼ cup whole milk Greek yogurt
½ cup melted and cooled coconut oil
2 large eggs hand whipped with a fork in a separate bowl until mixed well and one color
½ cup coconut milk (I used Silk Coconut Milk)
Butter or coconut oil to grease the muffin tins
1 nonstick muffin tin
*Optional Nutella topping
Instructions
Mix dry ingredients in a large bowl
Mix wet ingredients in a large bowl
Fold wet ingredients into the dry ingredients using a wooden spoon or silicone spatula
Fold in beet juice pulp until completely mixed and there are no longer white streaks
Grease the muffin tin with butter or coconut oil
Pour the mixture into the muffin tin until ½ full
Cook for 20 minutes, the muffins should pop up when pressed lightly in the center
Enjoy alone or with a dollop of Nutella.
